So if you want to make some premium charcoal, here’s a step by step instruction for you

1) The wood. You can make charcoal out of almost any wood. However every tree is unique. It’s a bit like picking grapes for wine. Wood species and climate of the forest decides what output you will get. Since we are speaking of premium charcoal, you need high density wood so that you maximise heat output and longevity.

For us, it’s European birch all way long. Growing in severe northern conditions, it has uniquely high density to endure the climate. Therefore perfect material to use in our work. Why not use South American trees? Well, their density is often as high as that of birch. However, there is another factor - the tannins.

2) The flavour

Cooking food on charcoal is a fun process. However different charcoal will bring different flavour to your food. That’s where the tannins come. The more there are in the wood, the more bitter and burning flavour you get. European birch only has 15% of those, while most other trees have 50-60%. So with birch we can get the food to taste just as it’s meant to. So, we’ve got the wood covered, what’s next?

3) The kiln

To carbonise the wood, you need proper equipment to make the pyrolysis process go as well as possible. There are several technologies used. Equipment matters at this stage. You want your premium charcoal to have big lumps and to have high carbon content to burn hot for a long time. To achieve that, your kiln needs to have good heat isolation to keep the carbinisation as high as possible. Also, good charcoal needs time to be ready, so you need 2-3 days for each batch to be fully ready.
